Swedish Baked Pancake (Fläskpannkaka)

This traditional Swedish baked pancake, known as fläskpannkaka, is a simple oven pancake made with eggs, milk, and flour that bakes up with golden edges and a soft custardy center. This version comes from my great grandma’s Swedish cookbook and has been a family favorite ever since.

Ingredients

  • 5 large eggs
  • 2 cup all-purpose flour
  • 4 cups whole milk
  • ½ cup sugar
  • 1 heaping teaspoon sea salt
  • 2 tablespoons butter per pan

Instructions

  • Preheat the oven

    Preheat your oven to 400°F.
    Place two 9in oven-safe skillets or baking dishes in the oven while it heats so the pan gets nice and hot.
  • Make the batter

    In a blender, mix on high speed for 3-4 min:
    • eggs
    • flour
    • milk
    • sugar
    Salt
    If you have time let the batter sit for 10 min for extra puff up when baking.
  • Prepare the pan

    Carefully remove the hot pan from the oven and add the butter, letting it melt and coat the bottom of the pan. Swirl to coat the sides of the pan.
  • Bake the pancake

    Pour half the batter into each the hot pan and return them to the oven.
    Bake for 30 minutes, until the pancake is puffed up and golden brown around the edges.
  • Serve

    Slice and serve warm with:
    • butter
    • powdered sugar
    • jam or fruit preserves
    The sweetness on top with the warm pancake is what makes this dish so simple and comforting.
