Homemade yellow cake with chocolate frosting from scratch with freshly milled flour, farm fresh eggs, and raw goats milk

The Best Yellow Cake w/ Chocolate frosting

This is the cake that everyone in my family requests on their birthday. Makes enough batter for two 9 inch round cake pans.

Ingredients

  • 3 ¾ Cup All purpose flour

    If using freshly milled use 4 3/4 cups

  • 2 ¼ Tsp Baking Powder
  • 2 ½ Tsp Baking Soda
  • 1 Cup Butter softened
  • 2 ½ Cups Sugar
  • 3 Eggs
  • 1 ½ Tsp Vanilla Extract
  • 2 ½ Cups Buttermilk (can sub whole milk)

Instructions

  • Mix flour, baking soda, and baking powder together and set aside
  • Using a stand or hand mixer, cream butter and sugar until light and fluffy
  • Beat eggs in one at a time, then stir in vanilla
  • Mix part of the flour mixture in, and then part of the buttermilk, alternating until all is combined.
  • Pour batter in prepared baking pans
  • Bake at 350 F for 35-40 min or until knife inserted into the center comes out clean
  • Cool completely before frosting and assembling cake

Chocolate Frosting

  • Beat 1/4 cup softened butter and 1/2 cup unsweetened cocoa powder in a medium bowl until blended. Add 1/3 cup milk and 1 tsp vanilla extract. Once combined add 3 1/2 cups powdered sugar and beat until smooth
