Instructions
Sauté the vegetables first
Preheat a heavy, deep skillet over medium-high heat with a drizzle of olive oil or 3 Tbsp butter.Add the diced onion and saute until the onions have softened. Add the minced garlic and cook for 1 min more, and then add the sliced mushrooms. Sauté until the onions are golden and the mushrooms have released their liquid and cooked down, about 6–8 minutes.Transfer everything to a plate and set aside.
Brown the ground beef
Add the ground beef to the same hot skillet. Break it up with a wooden spoon and cook until browned with no pink remaining.Season lightly with salt and pepper as it cooks.
Add flour & build the sauce
Add the sautéed vegetables back into the skillet and stir to combine. Sprinkle the flour over the cooked mix and stir well, coating the meat and absorbing any remaining fat.Slowly pour in the beef broth while stirring, then add:Heavy creamWorcestershire sauceSalt
Finish the sauce
Reduce heat to low and let everything simmer together for 5 minutes until thickened and creamy.Remove from heat and stir in the sour cream until smooth.Taste and adjust seasoning as needed.Mix with egg noodles or desired pasta. Alternately can be served over rice or mashed potatoes
