If there’s one dish that can win over even the pickiest eaters in a flash, it’s this creamy ground meat and pasta skillet. It’s cozy, it’s cheesy, and it comes together from pantry staples in minutes – no fancy ingredients or complicated techniques required. Think of it as a homemade twist on boxed mac and cheese, but with hearty ground meat and rich seasoning that gives it a rustic, satisfying depth. Once you try it, it will probably become part of your weekly meal rotation.

Why You’ll Love This Recipe

  • Quick and easy: Start to finish, you’re looking at about 30 minutes. Perfect for busy weeknights.
  • Pantry staples: You probably have everything on hand already – pasta, milk, butter, cheddar, and some ground meat.
  • Versatility: Beef is classic, but venison or elk give it a lean, flavorful twist. Swap shells for your favorite shape of pasta and you’ve got a new variation each time.
  • Comfort food vibes: Creamy sauce, warm spices, and tender pasta… it’s like a hug in a bowl.

What You’ll Need

  • 1 pound ground meat — beef, venison, or elk
  • 1 box (16 oz) pasta shells (or any shape you like)
  • 2 cups shredded cheddar cheese
  • 1½ cups whole milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon salt for seasoning the meat
  • Salt and pepper to taste

How It Comes Together

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Drain and set aside.
  2. Brown the meat: In a large skillet or Dutch oven over medium heat, brown the ground meat with 1 teaspoon of sea salt. Once it’s cooked through and nicely browned, drain off any excess fat.
  3. Build the roux: Sprinkle the flour over the cooked meat and add the butter, letting it melt into the pan. Stir to coat the meat and cook the flour for about a minute. This will thicken your sauce later on.
  4. Make the sauce: Pour in the milk and add your seasonings (garlic powder, onion powder, paprika). Keep the heat at medium-low and let the mixture warm through. Once it starts to thicken slightly, stir in the shredded cheese a handful at a time. Keep stirring gently as the cheese melts into a creamy sauce.
  5. Combine: Add the cooked pasta to the skillet and stir until everything is well coated with that luscious cheesy sauce. Taste, then add more salt and freshly ground pepper if needed.

Serving Suggestions

This dish is complete on its own but plays well with a side salad or steamed vegetables if you want to sneak in more greens. Leftovers reheat beautifully for lunch the next day (if you have any!).
