Yep, Steelhead go the ocean and can stay out there for years before returning to the rivers to spawn. Fisherman often call this “salting.” “This fish salted 3 times before I caught it.”

Steelhead is not a Salmon

When it comes to cooking steelhead you definitely don’t want to overcook it. It’s not fatty like salmon is and can overcook really quick. One of my favorite ways to make steelhead is using a marinade of preferred cooking oil mixed with orange juice and lemon juice parsley salt and pepper.

Prep Time 20 minutes
Cook Time 15 minutes
Serving Size 2 people

Ingredients

  • 10 oz Fish Steak
  • ¼ cup Orange Juice
  • ¼ cup Cooking oil
  • 1 tbsp Lemon Juice
  • 1 tsp salt coarse
  • 1 tsp parsley
  • ½ tsp pepper
  • 2 cups grapes seedless
  • ¼ cup cooking oil
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  • In a dish or bowl, place your fish skin side down
  • Drizzle 1/4 cup cooking oil (olive, avocado or grape seed )are my favorites
  • Pour 1/4 cup orange juice & 1 tsp Lemon juice
  • Add parsley salt and pepper.
  • Let marinade for 15 -20 minutes
  • Turn on Oven to 455 degrees
  • Place fish skin side down on cooking sheet and place in oven for 12 – 15 minutes.
  • Remove from oven and let rest for 5-10 minutes
  • In a sauce pan, pour in the grapes, the second 1/4 cup of oil, salt and pepper and sear them until they are about to pop open.
  • Remove from heat and serve with fish

Notes

I like to add brown or white rice with my recipes sometimes or fresh greens like asparagus or lettuce. The key is to not over cook the fish. It’s not quite as fatty as a salmon.
