Farmhouse Beef Pasta aka Beef Stroganoff (Creamy From-Scratch Dinner)

This Farmhouse Beef Pasta is our from-scratch version of classic beef stroganoff, made with tender mushrooms, caramelized onions, perfectly browned ground beef, venison, or elk, and a silky cream sauce that coats every noodle.
Itโs simple, affordable, and comes together in under 30 minutes. The kind of dinner your whole family will ask for again and again.

Ingredients
- 3 Tbsp butter
- 1 lb lean ground beef
- ยฝ medium onion, diced
- 1 lb mushrooms, sliced
- 2 garlic cloves, minced
- 2 Tbsp all-purpose flour
- 1 cup chicken or beef broth
- 1 cup heavy whipping cream
- โ cup sour cream
- 1 Tbsp Worcestershire sauce
- 1 tsp sea salt (adjust to taste) I season the meat with salt while browning and then add about 1 tsp to the sauce.
- ยฝ tsp black pepper (adjust to taste)
Instructions
1. Sautรฉ the vegetables first
Preheat a heavy, deep skillet over medium-high heat with a drizzle of olive oil or 3 Tbsp butter.
Add the diced onion and saute until the onions have softened. Add the minced garlic and cook for 1 min more, and and then add the sliced mushrooms. Sautรฉ until the onions are golden and the mushrooms have released their liquid and cooked down, about 6โ8 minutes.
Transfer everything to a plate and set aside.
2. Brown the ground beef
Add the ground beef to the same hot skillet. Break it up with a wooden spoon and cook until browned with no pink remaining.
Season lightly with salt and pepper as it cooks.
3. Add flour & build the sauce
Add the sautรฉed vegetables back into the skillet and stir to combine. Sprinkle the flour over the cooked mix and stir well, coating the meat and absorbing any remaining fat.
Slowly pour in the beef broth while stirring, then add:
- heavy cream
- Worcestershire sauce
- salt
Bring it to a gentle simmer.
4. Finish the sauce
Reduce heat to low and let everything simmer together for 5 minutes until thickened and creamy.
Remove from heat and stir in the sour cream until smooth.
Taste and adjust seasoning as needed.

Tips for the Best Result
- Donโt skip sautรฉing the onions, mushrooms, and garlic first โ it builds deep flavor.
- Browning the ground beef separately gives the sauce better texture and color.
- Add sour cream off the heat so it stays silky and doesnโt curdle.
- If the sauce gets too thick, thin with a splash of broth.
- If it feels too thin, simmer 1โ2 more minutes.
