Swedish Baked Pancake (Flรคskpannkaka Recipe from My Great Grandmaโ€™s Cookbook)

Some of my fondest memories from when I was little are of my grandma making flรคskpannkaka for me. The smell of it baking in the oven, the golden edges puffing up in the pan, and the simple way she served it with butter and powdered sugar always made it feel like the best kind of comfort food.

This recipe actually comes from my great grandmaโ€™s Swedish cookbook, and itโ€™s one of those dishes that has been passed down through generations in our family. Itโ€™s simple, made with pantry ingredients, and comes together in one pan โ€” the kind of recipe that reminds you how good homemade food can be.

Instead of cooking individual pancakes on the stovetop, the batter is poured into a hot pan and baked in the oven until it puffs up with golden edges and a soft, custardy center.

In our house we serve it the sweet way โ€” with butter, powdered sugar, or jam โ€” just like my grandma always did.

What is Flรคskpannkaka?

Flรคskpannkaka is a traditional Swedish baked pancake. The name literally translates to โ€œpork pancake,โ€ because some versions include bacon, but many families also make a simple version without meat.

The batter is baked in the oven rather than cooked like traditional pancakes, creating a dish thatโ€™s light and custardy in the middle with crisp, golden edges.

Itโ€™s rustic, comforting, and perfect for breakfast, brunch, or even a simple dinner.


Ingredients

This recipe makes two 9in skillets or baking dishes

5 large eggs

2 cup all-purpose flour

4 cups whole milk

1/2 cup sugar

1 heaping teaspoon sea salt

2 tablespoons butter per pan

For serving

Butter

Powdered sugar

Jam or berry preserves


Instructions

Preheat the oven

Preheat your oven to 400ยฐF.

Place two 9in oven-safe skillets or baking dishes in the oven while it heats so the pan gets nice and hot.


Make the batter

In a blender, mix on high speed for 3-4 min:

โ€ข eggs

โ€ข flour

โ€ข milk

โ€ข sugar

Salt

If you have time let the batter sit for 10 min for extra puff up when baking.


Prepare the pan

Carefully remove the hot pan from the oven and add the butter, letting it melt and coat the bottom of the pan. Swirl to coat the sides of the pan.


Bake the pancake

Pour half the batter into each the hot pan and return them to the oven.

Bake for 30 minutes, until the pancake is puffed up and golden brown around the edges.


Serve

Slice and serve warm with:
